Russian Tea Cakes

My grandma made multiple batches of these cookies every Christmas. They were among my favorites, and I’ve carried on the tradition of making them every year.

Ingredients

1 cup butter 1 tsp vanilla ½ cup confectioner’s sugar
2 ¼ cups flour—sifted ¼ tsp salt ¾ cup walnuts—finely chopped

 

Instructions

  • Preheat oven to 400°.
  • Cream together the butter, vanilla and confectioner’s sugar.
  • Sift together flour and salt and stir into butter mixture. Mix in the nuts.
  • Chill dough for a short time.
  • Roll into 1” balls.
  • Bake on ungreased baking sheet (cookies do not spread). Bake until set, but not brown (about 7 minutes).
  • Roll in confectioner’s sugar while still warm. Cool. Roll cookies in sugar again.
