Russian Tea Cakes

My grandma made multiple batches of these cookies every Christmas. They were among my favorites, and I’ve carried on the tradition of making them every year.

Ingredients
1 cup butter | 1 tsp vanilla | ½ cup confectioner’s sugar |

2 ¼ cups flour—sifted | ¼ tsp salt | ¾ cup walnuts—finely chopped |
Instructions
- Preheat oven to 400°.
- Cream together the butter, vanilla and confectioner’s sugar.
- Sift together flour and salt and stir into butter mixture. Mix in the nuts.
- Chill dough for a short time.
- Roll into 1” balls.
- Bake on ungreased baking sheet (cookies do not spread). Bake until set, but not brown (about 7 minutes).
- Roll in confectioner’s sugar while still warm. Cool. Roll cookies in sugar again.
