Broccoli Salad

This is definitely a crowd favorite and super easy to make. I had this at an Amish market and loved it – but realized it was easier and better to make it myself. I like to add the bacon just prior to serving. Hack: the store bought “real bacon bits” work well in this. It’s also a great use of raw broccoli and can be lightened by using part plain Greek yogurt and less mayo.

Ingredients
1 head of broccoli, cut into bite-sized pieces | 1 8-ounce bag of shredded cheddar cheese (or Swiss) | 3-4 strips of crispy bacon, crumbled (highly recommended, but optional) |

½ red onion, chopped well (can use Vidalia) | 1 to 1 ½ cup mayo | Salt and pepper, to taste |
½ to ¾ cup craisins or raisins | 3 tbsp sugar |
Instructions
- Mix together broccoli, red onion, craisins or raisins, and cheddar cheese.
- In a separate bowl, mix mayo and sugar together well. Add it to the broccoli mixture.
- Crumble and mix in the bacon just before serving. Season with salt and pepper.
- Refrigerate and serve cold.
