Auntie Glad’s Lime Green Party Salad

This Jell-O salad has been a part of our family holiday gatherings for generations, and is a true classic Americana dish. First brought by my Auntie Glad to our dinners in Arcade, NY during the 1960s and 70s, it evokes strong feelings of family togetherness and the importance of being there for one another. Now living in LeRoy, NY—the birthplace of Jell-O—it feels even more meaningful to carry on this delicious tradition and share it with loved ones.

Ingredients

¼ lb marshmallows 1 package lime flavored gelatin 1 #2 can undrained crushed pineapple
⅔ cup mayonnaise 1 cup milk 2 three ounce packages cream cheese
1 cup whipping cream whipped Lettuce

Instructions

  • Melt marshmallows and milk in top of double boiler.
  • Pour hot mixture over gelatin and stir until dissolved.
  • Add cheese and stir until smooth, add pineapple, cool and blend in cream and mayonnaise.
  • Pour into mold and chill until firm.
  • Serve on lettuce.
