Achi’s Pepper Chicken

Whenever my mom made her famous pepper chicken (only on special occasions), my siblings and I would relish it with gusto. Later, it became a favorite amongst all her grandchildren. Now we call it Achi’s (grandma) pepper chicken and everyone continues to finger-lick their way through it.

Servings: 3 Cultural Connection: Madurai, India

Ingredients

6 chicken drumsticks (skinned) ½ tsp pepper powder ½ tsp chili powder
1 tsp cumin powder 1 inch piece of ginger (minced) 3 cloves of garlic (minced)
Salt, to taste 1 tbsp olive oil

 

Instructions

  • Pierce the chicken with a fork
  • Mix together the remaining ingredients to make a marinade; marinate the chicken for a couple of hours
  • Cook on stove top until chicken is done
  • Continue cooking if you like your chicken browned- Tastes even better the day after.
