Achi’s Pepper Chicken

Whenever my mom made her famous pepper chicken (only on special occasions), my siblings and I would relish it with gusto. Later, it became a favorite amongst all her grandchildren. Now we call it Achi’s (grandma) pepper chicken and everyone continues to finger-lick their way through it.

Ingredients
6 chicken drumsticks (skinned) | ½ tsp pepper powder | ½ tsp chili powder |
---|---|---|
1 tsp cumin powder | 1 inch piece of ginger (minced) | 3 cloves of garlic (minced) |
Salt, to taste | 1 tbsp olive oil |
Instructions
- Pierce the chicken with a fork
- Mix together the remaining ingredients to make a marinade; marinate the chicken for a couple of hours
- Cook on stove top until chicken is done
- Continue cooking if you like your chicken browned- Tastes even better the day after.
