Broccoli Salad

This is definitely a crowd favorite and super easy to make. I had this at an Amish market and loved it – but realized it was easier and better to make it myself. I like to add the bacon just prior to serving. Hack: the store bought “real bacon bits” work well in this. It’s also a great use of raw broccoli and can be lightened by using part plain Greek yogurt and less mayo.

Ingredients

1 head of broccoli, cut into bite-sized pieces 1 8-ounce bag of shredded cheddar cheese (or Swiss) 3-4 strips of crispy bacon, crumbled (highly recommended, but optional)
½ red onion, chopped well (can use Vidalia) 1 to 1 ½ cup mayo Salt and pepper, to taste
½ to ¾ cup craisins or raisins 3 tbsp sugar

 

Instructions

  • Mix together broccoli, red onion, craisins or raisins, and cheddar cheese.
  • In a separate bowl, mix mayo and sugar together well. Add it to the broccoli mixture.
  • Crumble and mix in the bacon just before serving. Season with salt and pepper.
  • Refrigerate and serve cold.
