Citrus-Stuffed Turkey

Submitted by: Raquel Mendelow Rein, MLS, 2012

This was a recipe from my dear husband’s South African friend, Melanie. She taught us that instead of stuffing the turkey with traditional stuffing, stuff it with citrus instead to make a pretty, not-so-edible-due-to-the- bitter-taste stuffing to absorb the turkey fat. We have served this to our family every Thanksgiving for the past five years.

Servings: 10-12 Cultural Connection: South Africa

Ingredients

1 10-15 lb turkey. 5 grapefruits 6 oranges
3 limes 3 lemons 2 onions
3-inch piece of string to tie the legs around

Instructions

  • Preheat oven to 325 degrees Fahrenheit.
  • Cut up grapefruits, oranges, limes, lemons, and onions into wedges that would fit inside the turkey.
  • Take your turkey and wash it thoroughly before stuffing it with the citrus fruits.
  • Put cut-up citrus wedges inside the turkey.
  • Take the 3-inch string and tie the legs together.
  • Place turkey in the oven and bake for four hours.
  • When turkey is done, take it out of the oven and slice it for everyone to enjoy!
