Italian Butterballs

This is my ‘go-to’ recipe for all weddings, showers and holidays since it only uses 4 ingredients and is quick to make. I can make 1 batch in 21 minutes, including cleanup! This recipe is similar to Mexican Wedding cakes or Russian Tea cakes except I do not add nuts.

Prepared Italian Butterballs
“Italian Butterballs” by Rosanne Frandina

Ingredients

1 cup softened butter 3/4 cup confectioners sugar (not granulated sugar) 2 cups flour
1 tbsp Vanilla Extract

Instructions

  • Cream the softened butter with the confectioners sugar on low speed
  • Add the vanilla extract
  • Add the flour
  • Mix at low speed until combined and smooth
  • Preheat oven to 325 degrees
  • Line a cookie sheet with parchment paper
  • Drop by rounded teaspoons onto the cookie sheet and roll by hand into balls.
  • Place about 1 inch apart on the cookie sheet.
  • Bake until the bottom is slightly browned, about 8 minutes.
  • DO NOT OVERBAKE.
  • You want the cookie to be soft and chewy. After the cookie is cooled, sprinkle generously with more confectioners sugar until totally coated with sugar.
  • Enjoy!
