Italian Butterballs

This is my ‘go-to’ recipe for all weddings, showers and holidays since it only uses 4 ingredients and is quick to make. I can make 1 batch in 21 minutes, including cleanup! This recipe is similar to Mexican Wedding cakes or Russian Tea cakes except I do not add nuts.

Ingredients
1 cup softened butter | 3/4 cup confectioners sugar (not granulated sugar) | 2 cups flour |

1 tbsp Vanilla Extract |
Instructions
- Cream the softened butter with the confectioners sugar on low speed
- Add the vanilla extract
- Add the flour
- Mix at low speed until combined and smooth
- Preheat oven to 325 degrees
- Line a cookie sheet with parchment paper
- Drop by rounded teaspoons onto the cookie sheet and roll by hand into balls.
- Place about 1 inch apart on the cookie sheet.
- Bake until the bottom is slightly browned, about 8 minutes.
- DO NOT OVERBAKE.
- You want the cookie to be soft and chewy. After the cookie is cooled, sprinkle generously with more confectioners sugar until totally coated with sugar.
